Easy to make and delicious. We had it in the oven for ~2 hours but expected it to take a while (pieces of beef were cut larger than 1"). We served it with homemade egg noodles. I only made the meatballs and used sauce from a jar. I followed the recipe exactly with the exception that I finished the meatballs in the oven and not directly in the sauce. I also agreed with other reviewers and used regular coconut milk - every time I have used light coconut milk in a recipe it has not been great. So good!!! I used regular mayo and light sour cream. I also used a box or so of frozen artichokes (thawed) instead of canned artichokes and made sure to drain them really well. It's also important to drain spinach really well (like Paula did with her hands). Lots of salt and pepper too make it perfect. "
