"AMAZING! Tasted better than redskin potatoes, and, as someone said earlier, the sauce is good enough to put on mashed potatoes. I used onions instead of a shallot (as many as I wanted), balsamic instead of red wine vinegar, chicken broth instead of chicken stock, and left out the sugar because I'm a low-carber. SO, SO GOOD."

About Me

I switched to a low carb diet after losing 30 pounds on a low calorie diet entirely by eating less.  I decided I wanted exercise in my life, but as soon as I started working out, my sugar cravings on my old diet became huge and insatiable, and I gained 10 pounds.

I am excited about the benefits a low carb lifestyle will bring to my heavy training regime, but understand the diet and lifestyle is not for everyone.

Exercise in my life right now includes parkour training 3x a week, trail running 3x a week, 3 to 4 mile paved flat runs once or twice a week, and weight lifting.
