"Very easy. A great make ahead dessert for company. I would add other elements to it next time, like a layer of carmel sauce or strawberry jam, the possibilities are endless. Can see myself using this as a base recipe for experimenting with different flavors and fillings. "

"This was my first sweet potato pie. I thought it was excellent. I followed the recipe exactly and it came out fine. I used two medium sweet potatoes. I blended the sweet potato filling in a blender to make it perfectly creamy!

"These tasted fantastic! The only problem I had was that there was enough batter to make 36 cupcakes and only enough frosting for 18. When I make these again I will double the frosting part of the recipe. The decorations were great! I did use paper cupcake liners, they stuck a little to the top edge of the cupcake, but didn't ruin the cupcakes.
