"Made this with black-eyed peas (instead of pinto beans) for New Years - terrific! Did not seem labor-intensive to me at all. Made them in the morning, then put the beans in a casserole dish and baked them to re-heat. Grated the queso on top and it looked almost as good as it tasted! 2012 should be a good year, since we ate LOTS of them! Can't""
