This was excellent. I made it for Mother's Day dinner, and every one loved it. It will serve a lot of people and you can use whatever seafood you like. I used Shrimp and Scallops.

First of all...do not cook it that long, it will be dry! cook only to brown top and melt cheese. I used plain croutons and it was very tasty. The cheese was a little pricey and you could always subsitute with what you have on hand.

I would definitely use puff pastry, it makes this dish so much easier to make. You could use any seafood you like. I would recommend using shrimp, scallops, even white fish. I used white wine instead of pernod, but that would definitely complement the fennel just as well.

This was excellent. I used shrimp instead and found it a very flavor full. I added a pinch of sugar to balance it. You should go easy on the red pepper a little goes a long way!
