Alton, I'm sorry. I didn't follow your instructions exactly. Didn't brine the turkey (no place to put it without contracting salmonella). Didn't take the chill off the turkey for an hour (no time as I over slept) BUT I did make the turkey breastplate, 500 degrees for the first half hour and then 350 for the rest of the cooking time and IT WAS FABULOUS!!!!...
