Replied to Vegetable Meatloaf with Balsamic Glaze

Nov 8, 2013 on FoodNetwork.com

I also doubled the recipe but then made four small meatloafs instead of two. Put them in a disposable aluminum pan & froze. Can I cook from frozen? If so, how long and at what temp? Remember, these are half the size of a regular one. Thanks!

I don't even eat beef but this soup was excellent. I could only find stew meat & neck bones, but the meat was very flavorful. Added crimini mushrooms for extra flavor. This is definitely perfect for a cold winter day with some crusty bread and a glass of red wine.

This is the moistest, tastiest meatloaf I've ever had. I've already "converted" some beef eaters and I'm sure to convince more! Took mghstl's advise and last weekend I doubled the recipe and then filled four small aluminum pans so that I could freeze three of them for baking later.

Reviewed Roast Chicken Enchilada Suizas Stacked Casserole

Oct 20, 2013 on FoodNetwork.com

I charred the poblanos & the jalapeno on my outdoor grill and I halved & roasted the tomatillos in the oven to give these ingredients more depth of flavor. I only had pepper jack cheese on hand, but that worked well and added that extra kick that some other reviewers said was missing. I cheated by using a rotisserie chicken & used fat...

Reviewed Parmesan Eggplant Fries with Basil Ketchup

Oct 20, 2013 on FoodNetwork.com

This is the first recipe of Giada's that I didn't like. The fries were bland and tough even I followed her recipe exactly. I ended up throwing them out. All of her other recipes I've always had great success with, so this recipe being a flop was quite a surprise.

I went with this recipe because of the anchovies. I only used 2 but could have used one or two more to add more depth. I backed off on the salt and the amount of olive oil and still the dish was excellent.

I didn't want to use my "precious stash" of San Marzano tomatoes, but it was great even with regular whole peeled tomatoes....

I was really disappointed with this, even though I followed the recipe exactly. I had all of the ingredients on hand. It was boring.""

Reviewed Pan Seared Salmon with Sour Cream and Dill

Jan 16, 2012 in Food Network Community Toolbox on FoodNetwork.com

I substituted non-fat Greek yogurt for the sour cream. Wish I could post pictures because I used my grill pan and the salmon was absolutely beautiful. I served this on a bed of wild rice. Definitely will make this again! The fresh salmon was on sale for $5.99/lb. and I got a big bag of shallots that were on sale as well. I need to use shallo...

I had tried making gravlax years ago but the recipe was very complicated and results weren't good. Chuck made it so easy and his recipe is delicious! I'll definitely be making this again.""

Reviewed Hot Artichoke-Spinach Dip

Dec 24, 2011 in Food Network Community Toolbox on FoodNetwork.com

Just pulled it out of the oven, let it cool a little, and tasted it. It's ok, but is lacking something. I cut the recipe in half since I was trying to use up my artichokes & spinach. Cooked it in two rammikens, thought I'd have one tonight and one later in the week.

I love cannelini beans, and often puree them or other beans...

Oct 5, 2011 in Food Network Community Toolbox on FoodNetwork.com

I was watching this episode tonight after work and realized I had all the ingredients in the fridge with the exception of mint, but I had plenty of basil growing on my balcony.

It was good, but needed more kick. I liked the creaminess of the sauce, but next time I'm going to add another layer of flavor by roasting the veggies with...

I kinda cheated : since earlier today I was at a wonderful Greek Festival and had grilled octopus that I couldn't finish. I typed in "Grilled Octopus Salad" here and found this recipe. So I used the leftover octopus and had all of the other ingredients on hand so this worked out great. Next time I'll attempt to cook the octopus myself, since I'll...
