"Great! Forgot to add the olive oil and vinegar but we loved it anyway. My daughter is on Weight Watchers so to lighten it up for her we salted the eggplant, sprayed it with olive oil spray, coated it with only the breadcrumbs, and then placed it under the broiler until crispy.
