This is the first time making beans ever. My grocer didn't have ham hock available so I used a salt pork. Im adding some andouille sausage, and cooked apple wood smoked bacon after the first 2 hours of cooking. I just had some bacon so I thought what the heck, I'll use it up. You cant go wrong with bacon! I'm fixing to make the corn bread late"

So I made this on Christmas Day, but I used Filet Mignon instead. It was love at first bite! My ultra picky step-daughter asked "whats that in the bowl?" And I told her, she immediately reached over and gave herself a big helping and went back for more. The blue cheese sauce really makes the whole meal. This is definitely a keeper in my house"
