My favorite, go-to recipe for banana bread. I've worked with so many versions, most using at least a cup of butter. With this recipe, I can cut back to a 1/4 cup of oil (+1/4 cup unsweetened applesauce) and a scant cup of sugar and I don't notice a difference in moistness at all.

The creme fraiche really does make a difference...
