Cheesecakes are supposed to be made in a water bath to even out temperature, keep it moist, and avoid cracking. I tried following this Emerril recipe which doesn't call for a water bath and asks you to bake it at 500 for 12 minutes then at a lower temp afterwards. This caused lots of cracks.
