Reviewed Roast Pork Loin with Apples

I made this with a couple of changes to the sauce. I had neither the cider vinegar nor the cider, so I used balsamic vinegar and chicken stock. It was delicious. The pork was moist and tender and the veggies were fantastic. Everyone loved dinner tonight, served with rice pilaf and tossed salad. There was enough pork left for lunch tomorrow too!...
