Reviewed couscous-stuffed peppers with basil sauce

This has become a much loved staple on our dinner rotation. It's tasty as is, but also adapts well to additions and variations. Every time I've made the sauce the creme fraiche has curdled as I blend it in the food processor so now I use the food processor to blend all ingredients but CF. That i stir in by hand....problem solved.

Delish!!! There is so much flavor in this simple recipe. My 11 year old said "this is outstanding mom". Love that! I used brown rice instead of couscous because I had it on hand, also used mascarpone and sour cream mixed because I didn't have creme fraiche. It seems to be a very forgiving recipe.
