Reviewed Chicken Enchiladas with Roasted Tomatillo Chile Salsa

"These enchiladas were awesome. My boyfriend laughed at me when I refused to buy enchilada sauce. But when I made these for him, he was wowed! The roasted tomatillo chile salsa was spectacular. I used a pound and a half of tomatillas and still wish I had made more. The rice was a good side dish but wasn't anything special. I used a can of black beans instead of soaking them overnight.
