Reviewed Eggplant Parmigiana

"Really Tasty!!! I will make again. I couldn't find the specific brand of tomatoes listed in recipe, so I used Hunts - took longer than 10-15 minutes stated above for tomatoes to cook down. Also, too watery...cooked even longer to try and reduce that, totaling about 25 min. Next....recipe states "Prep time" as 35 min - Oh my, took much longer than that! It took that long just to prepare and cook the eggplant. I would guess prep and cook time took me at least 2 hrs, and I'm not slow. I watched the episode of her making this recipe, she added the sugar at the same time she put onions in pan to cook down, not to the tomatoes - not sure it really matters, though. ***Make sure to put on cookie sheet or place foil on bottom of oven - mine bubbled over. Easily serves 6-8, rather than 4-6 as stated above.
