At no point did Tyler Florence state these were "authentic" enchiladas. Currently living in a state that shares a very long border with Mexico, we would recognize this as Tex-Mex, where almost anything goes...even flour tortillas. And, here's a trick to see how hot your jalapeno is: taste the thing! And, rotel tomatoes just make it less authentic....

I needed to use up a head of cauliflower, so I made this minus broccoli and bacon. I didn't have the Old Bay so I swapped a drizzle of toasted sesame oil in place of the vegetable. I haven't had the sauce on my steak yet, but the sauce is so good I was hard put to stop myself from licking the food processor blade. We decided to add a fresno pepper, so it's an odd color, but we like the heat.

Even my scaled down version (no giardiniera, no red peppers, and stuffed into a toasty, cheesy loaf of Italian bread) was totally awesome! I can't wait to make it again with all the fixin's. And next time I'm making a full batch so I have leftovers. Thank you, Jeff.

OMB! Gryos are just about my favorite guilty food indulgence, and this tastes just like a gyro. The feta sauce was ssssooo good. As written, I give it a three. This is what I did to make it a 4 or 5: I used green enchilada sauce straight from the can. I think the canned chilis taste too canned. I skipped cooking the onion and used the time to shred some cabbage, dice a tomato, an avocado, cilantro and onion. I doused the garnish with lime juice and topped the enchiladas...
