Very good first time making a souffle! The only reason I gave this 4 stars instead of 5 was because I don't like nutmeg and didn't enjoy the way it mixed with the egg and cheese. I didn't have 6 oz ramekins, so I used 6 4-oz ramekins instead. It turned out just right in exactly 30 minutes. Light, fluffy, melted on my tongue with that...
