Reviewed Roasted Turkey Roulade
"Good idea, very hard to execute it you don't have a butcher were you can get a boned butterflied turkey breast. Didn't use sausage but minced, seasoned & sautéed turkey liver.
Didn't want to buy the Calavdos used 1/2 apple juice and 1/2 bourbon.
Didn't use figs or pine nuts, just dried cranberries and toasted walnuts. Only used teaspoon of minced fresh rosemary, adding it to taste (can't imagine 3 ½ T) used a hefty teaspoon of dried sage.
Mangled the turkey breast trying to bone it myself but managed to piece it together. Came out of the oven looking better then it went in. Did turn it over to brown bottom skin under broiler. Not very pretty, but very yummy.

Didn't use nearly as much rosemary. Can't imagine what it would taste like with that much; used probably a teaspoon of minced fresh rosemary, adding it to taste. Used a hefty teaspoon of dried sage.
Okay, so the stuffing, even with the changes (esp with little bit of liver) yummy!
Trying to bone your own turkey breast...wow, not so good. Try and find something on youtube before you try and attack a bone-in breast.
I ended up with two somewhat mangled halves and what looked like a tenderloin. Came up with the brilliant idea of putting stuffing on both breast halves (which i did butterfly a bit), put the tenderloin in between and kinda sandwich it all together

Tying this creation was quite a challenge.
I was laughing a lot as I put it in the oven, but it came out looking a lot better then I thought it would. At the end of the cooking and after it rested, the bottom of the "roll" was very pale, so I turned it over and put it under the broiler just to give it some color and crispness.
After it rested I sliced it so it will be easier to heat tomorrow. I got to eat the ends. Yummy! Not pretty, basically falling apart, but I was able to get slices with some stuffing inside.
Hope this helps if you're in the same situation and don't have a specialty butcher.
