Reviewed Roasted Cauliflower, Brussels Sprouts and Jerusalem Artichokes

This was my first recipe with "sunchokes" and will probably be my last. I was not a fan. And I am a vegetable LOVER!! However, in my opinion, they tasted like an under cooked potato. Maybe I will try this recipe again and substitue potatoes instead of sunchokes.

This was SOOOOO Yummy! I love to find new ways to cook all kinds of vegetables, because I LOVE my veggies, and this is my new favorite dish. I absolutely loved it. I did pre-bake my potatoes and carrots for 20 minutes before I added the rest of the ingredients. Just to soften them. And the Parmesan....OMG! Delish! Next time I will sprinkle some parmesan...
