This if my favorite stuffed pepper recipe. I did use a package of frozen creamed spinach instead of plain and ground turkey instead of beef. The feta is good in the mix (a little more than called for) than on top. I mixed one can stewed tomatoes in the mixture and one on top.

This is the best turkey ever. I have made it 4 times already since last Thanksgiving. I used white wine the first two times and omitted it the last two, using chicken stock instead. It's great either way.

This was delicious. I did use ground turkey and chicken stock instead of the beef and didn't miss a thing. Also, instead of the potato cauliflower topping I used a double recipe of George Stella's Mock Mashed Potatoes from this site. It's a great low carb alternative that uses all cauliflower and no potatoes - and it has plenty of flavor!
