I haven't made this yet but do have a copy but I plan on cutting down the work tremendously by not browning the pancetta and short ribs and throwing them into the crockpot along with everything else but the pasta and cook all day. Very good. I did not use tabasco as I don't care for it so I substituted a jalapeno. I might substitute the lemon juice for lime juice as someone suggested adn see if that makes it any better.

Don't be watching your waistline or cholesterol if you make this. Is an unbelievably rich dish so definitely a big indulgence. I used the pancetta and I think it's essential to give the dish it's flavor kick. I have to agree that the sauce is strong and if I made this again I was make the shells as is but probably use a red sauce instead of cheese...

Absolutely terrific. Don't know what amarone wine is so I just used dry red that I had on hand. Wonderful for a cold rainy/snowy day. I saw him make this on his show and he pared it with "fall salad" which I also made which was very good as well and, of course, mashed potatoes. Elegant comfort food.

This is the only way I make asparagus - so sweet they are like candy to me. I do not cook them anywhere near 25 minutes since I think that is far too long. No more than 10 minutes unless you have really thick asparagus. Sometimes I put parmesan cheese on as well. Plain or with chees - both are great.

Excellent. I used only chicken breasts as I do not like thighs. I did not have saffron so I made the orzo with just the parsley and it was still a great dish for summer meal.

This recipe was ok but not as good as I thought it would be and it took a great deal of work. If I make it again I would use a rotisserie chicken and perhaps add smoe sherry as someone suggested and use romano or asiago cheese instead of parmesan cheese.
