Reviewed Roasted Prime Rib with Thyme and Marsala

I was very nervous to cook a $60 piece of meat, but it was worth every penny! My cut was a little less than 6lbs, so I reduced the temp to 400 for the last hour, and put a little water in the pan to cut back on the smoke from the juices.
