Had a large (over 12") sweet potato, had some left over pulled pork, and a honey chipotle bbq sauce, made my own chipotle mayo and added some diced roasted onion and topped with green onions. Just made these sweet potatoes this evening. Like a few others I did not par boil them first as like a bit of a snap to them vs. being totally soft. Great flavor combination.
