I have made this numerous times because it is delicious and easy! I only used arugula the first time, but have switched to spinach and it taste just as good. For more sauce, I just use more Pinot grigio and the spinach adds liquid to the sauce too!"

I was looking to incorporate couscous into my family's diet and my husband is a pescaterian. This was the perfect dish & you can never go wrong with Vietnamese flavors. It was easy, delicious & great for hot summers! Will be making this again!"
