I thought this was fantastic! I followed the salsa recipe pretty closely with the exception of being a little heavy handed with the cilantro but I love cilantro. I did not add the avocado into the food processor; I mixed it in as a chunky, chopped ingredient after I did all the other ingredients in the food processor. I did not find it too salty...

This is RIDICULOUSLY delicious!!! I love this recipe and followed it pretty closely. I added some mushrooms that were leftover from dinner the night before and doubled the zucchini to sub for the eggplant (didn't want to drive to the store), threw in some feta in the mixture before stuffing and finished them on the grill with some chicken tenders.......AMAZING,...

These are the most amazing pancakes I have ever eaten! Light, fluffy, lemony and just delicious. When I make these I 'lighten' them up a little sometimes by mixing sugar free pancake syrup and low sugar blueberry jam and pour it over top a dollop of the lemon curd. I can't say enough about how perfect these pancakes turn out!!"
