The "the whole point is there is no ham" is incorrect. But what would Ms D'Arabian know about French food having lived in France and being married to a Frenchman. A simple internet search would have revealed that substituting chicken for the ham is a British or American adaptation...

This is my favorite slaw of all time! I love fennel, but it is generally pricey in my area at $4-5 each and never goes on sale, but I make it because it is so good, although I am going to try to grow some in the garden this year."
