Initially had a slightly gritty texture. Turns out it was just due to my impatience. You need to let the pudding chill the complete four hours and probably more.

Mine had a slightly gritty texture as well. Its the only rice pudding I've ever had so I'm not sure if that's how its supposed to be or not. However, the flavor was excellent.
