This is just nasty. Given the amount of seltzer,I knew the recipe did not call for enough juice. so when I made it, I doubled all the juices. Was still a watery mess. Good idea, but something was missing. :(

Made these tonight to go with fried chicken and sliced tomatoes. The recipe made 18 good sized muffins . Nice and moist. Different than plain old cornbread. I needed to use the two cups of milk. I tried this after seeing the recipe on TV and reading some of the reviews. I lowered the oven temp to 400 F. I baked the potatoes 30 minutes, then added the onions along with another tablespoon of both mustard and olive oil. continued baking the last 30 minutes. Also, I didn't have whole grain mustard, used Dijon instead. They came out great."

I only made the onion rings. I've been trying to make onion rings at home for years. And have tried many different recipes and cooking methods. These were great! Crunchy,crisp, not at all soggy or greasy. Also, I didn't have buttermilk. Used whole milk and they came out fine."
