"I made 1/4 recipe for myself last night. They were great and went well with the meatloaf. I saved the skins and used them for "hash browns" in the morning with a little shallot and a strip of bacon. "I made these last night and they were so tasty. I only did 4 jalapenos, so I cut back accordingly. These were terrific! The surprising thing was that they were just as good or better served cold with ham and eggs the next morning.
