Great, easy recipe. Just made it for my kid who has the flu. Definitely recommend adding garlic and 1/2 chicken broth/water for added flavor. Also, good idea to skim off the fat after cooking the chicken. I prefer spice, so I added a shot of shiracha to my bowl -- delicious!

This is delicious! I added chopped baked potato (5 minutes in the microwave) to give it some body, used a cast iron skillet, and cooked the bottom on the stove for a few minutes before putting it in the oven, and it came out perfectly! Very nice flavors!

Great recipe. Very flavorful, light, and extremely nutritious. I, too, used olive oil in lieu of butter. Also added red and yellow peppers. Used a very fresh whole red snapper from Whole Foods. My foodie teenage daughter loved it, as did my eight-year-old. Highly recommended. "
