This is now my go to souffle recipe. The ease is awesome, and I love the fact that there's no flour. I wanted to use up some of my left over chocolate bars. Had one that had intense orange flavor, sived the dried orange peel out after melting (didn't know how it might affect the rise and texture of the souffles) Made mini pot de creme sized baking...

Delish. It was a big hit, I added crumbled bacon on top and served it on Bib Lettuce cut into ribbons.

FABULOUS....This was a smash with my Valentines. Couldn't come up with Sherry vinegar, used Cooking Sherry along with the brandy. HINT-If you don't have a venting hood that draws the smoke out, use your cast iron out on the grill. I had 15 steaks to do and the smoke alarm sounded for almost 20 minutes, but it didn't stop me. Dinner was a hit Thanks...
