I read the other reviews before I made, and in response to other comments, did double the spices and use 6 cups of nuts instead of 4. I think you could easily use 3 TB butter instead of 4. Simple and tasted great. Also did the wine as other suggested. I really liked that I could do it in stages (cooking potatoes, prepping paste,browning), as I had limited blocks of time between my kids' activities. It also made the house smell fabulous!!

Fantastic cookie. Not too sweet with a nice ginger taste. Love the balance between the molasses and ginger flavors, and the crystallized ginger really makes them special -- used a little more than called for when I made the 2nd batch. Will definitely make again... and again... and again!"

We had a ton of mint and Thai basil from our garden, and this recipe was fantastic for using it up! I did not add the chili paste as I didn't have time to go to another store to look for it (I had almost everything else on hand). Great flavors.
