Reviewed Chicken Enchiladas

AMAZING DISH!! Although messy, I have extra enchilada sauce on hand. I dip the tortilla into the sauce, one at a time, for 10 seconds just before they are filled and rolled. Soaking the tortillas for this amount of time keeps the tortillas pliable when rolling the ingredients into them. The enchiladas come from the oven soft and very delicious!"

I made this recipe with the eggs, shredded carrots, diced red pepper, frozen corn and broccoli, and lots of garlic sautéed as per instructions with olive oil. I served with grilled chicken that I marinated in Soy Vey. Fabulous!! My son who takes out most vegetables ate everything without a complaint. It's definitely a keeper."
