Reviewed Oven-roasted Turkey Breast with Leeks and Cornbread Stuffing

"I have made this recipe twice. Both times I have used a rather large Turkey Breast. It took a little while longer (maybe 1 1/2 hr @ 350 degrees .
The seasonings in the stuffing are perfect and the meat is so moist and tender! I will make this again and again as it satisfies the "turkey urge" for a small family( 2 of us without alot the left ove"

"This was an excellent weeknight dinner. I cut the recipe in half and it was still a teensy bit tooo much for the 2 of us. I would definately make this again. Maybe if I wanted to "tart it up" for company I would fold in in a little shredded spinach or arugula, but basically a nice marriage of flavors. "
