"Really really really great recipe. Easy to make and the right amount of sweetness. I left out the sugar topping, but what I would call moreish, the more you eat it the more of it you want. Really wonderful taste and goes great with a cup of black coffee."
Reviewed Trinidadian Chicken Stew
"You can also use two tablespoons of molasses instead of the sugar and the oil directly onto the chicken, the chicken will render its fat, then pour a little water slowly until the chicken is browned all over. You could also use any vegetable instead of carrots e.g. melongene or pigeon peas(which is a Trinidadian peas) and gives a nice flavour to the chicken. Fresh tomatoes, some garlic and half an onion chopped into the pot while the chicken is stewing also gives great flavour."
