I made it with an elk and pork blend. Really tasty on GF spagetti. My man was thrilled that I took the time to make this.

I added sliced zuchinni and yellow squash, used red pepper chunks too, a bit of extra cream, fennel sausage, made my own dried herb blend (half/half basil and oregano with a touch of thyme and fennel) and used GF penne. Wonderful!

Super tasty, I did modify a but; used boneless pork chops cut into 1/2 inch cubes and marinated in lime juice, a touch of olive oil, salt for 30 min. Yummy but I think it has a bit too much scallion in it, I used half the listed amound and found it more than enough. And I find the best way to roast beets is to cut them in half from top to bottom, drizzle with mild olive oil, sprinkle with salad, roll around to cover with the oil and then make sure they are cut side down.
