"Delicous. Sandra was right, parboiling the potatoes before roasting them in the oven is key. In the past I've tried roasting potatoes without boiling them and I ended up with soggy potatoes that wouldn't crisp. This recipe left them smooth and creamy in the middle with a crunch on the outside. The mix of potatoes is not only a nice change, but I was able to sneak in sweet potatoes that my family "don't" like. The herb butter was a nice finishing touch. This recipe is definately a keeper.

"Fannntastic! It was so easy and I already all of the ingredients on hand. This recipe left the pork so moist (which can easily become very dry) yet it still had the nice crunchy bits around the edges me and my daughter fight over. I will definately be adding this recipe to my recipe box and using it again!
