I've made this twice now, both times with great success. Both times I've added 1 cup of chicken stock to thin it a bit, and didn't bother blending. My only recommendation is to use 1 to 1.5 cups of shredded velveeta as part of your cheese mix as it really gives it a smooth, creamy texture.
