Reviewed Wild Mushroom Risotto
"Made this risotto for the first time tonight. Halved it, just for me, and there was plenty for 4 as a side. Maybe 6. Fabulous! However, did have trouble with the vigorous stirring at the end yielding the desired creamy texture. Nobody seemed to have an issue except me! I waited until all the liquid was absorbed, added the butter and parmesan. Used a wooden spoon. Anyone have a thought? Thanks!"
