A little too meaty as published, in my opininon. I added a splash of heavy cream with the brandy, and then chopped some fresh herbs to add before chilling. I had dill, italian parsley and just a touch of basil on hand....chopped together and added it to the mix brightened up the flavor so much....will definitely be experimenting more with this "

Such a great recipe!! I added a small wheel of camabert cheese to the stuffing to counteract the smokey chipotle and spicy cinnamon, then topped with a sauce I made with heavy cream, fontina cheese and a touch of fresh garlic. Served with sides of diced shallots and apples sauteed in butter and finished off with a bit of sherry and a light spinach...
