Reviewed Homemade Chicken Stock

Feb 22, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was my first attempt at making my own stock and I was unprepared, to say the least. I wasn't thinking the whole process through. First off, 4 quarts is A LOT! For some reason, I thought that I wouldn't end up with 4 quarts, but about 1/2 of that. Not so...I may have actually ended up with more than 4 quarts with all the liquid from the vegetables....

These were great. I was assembling them at a party and was fighting to keep up with the demand. "

Reviewed Crisp Red Snapper with Ragout of Potatoes, Onions, Artichokes, and Green Olives with Sauce Vierge

Feb 22, 2011 in Food Network Community Toolbox on FoodNetwork.com

The fish was delicious - simple, but very flavorful. After reading the recipe and the previous, I adjusted the cooking methods for the ragout. I boiled the potatoes first and roasted the onions separately before combining them all together in the pan. I also premade the sauce and I think it tasted better because the flavors had time to blend. ...

This recipe has huge potential, but following the recipe almost exactly doesn't really do it for me. I'm not giving up, though. After reading some reviews, I think bacon would be fantastic and also adding some better melting cheese. My kids like the cupcake factor, but I think I may throw in some American cheese for them next time. I had no problem...

Reviewed Chunky Guacamole

This is the best guacamole I have ever had. I have made this so many times and I follow the recipe almost to a "T" each time because it never fails. I usually do put in the lime in last because I like just a hint and if the limes are really potent, I don't need the full amount called for. It is my go to recipe to take to parties and I have yet to...

Reviewed Oatmeal Cookies

Nov 18, 2010 in Food Network Community Toolbox on Food Network

I was trying to use up stuff I had on hand so my applesauce was sweetened, I used all purpose flour for the whole recipe and quick oats instead of rolled oats (I honestly don't know the difference, if any). I also didn't have raisins, but no one in my family really likes raisins anyway. Overall, these didn't turn out too bad - they are more cakey...

Reviewed Chicken Cigars

Oct 20, 2010 in Food Network Community Toolbox on Food Network

These were just OK. I didn't follow the recipe too closely because I was only using what I had on hand. I used whole chicken breasts instead of ground chicken. I sliced thin strips of the chicken and cooked them through first. I then tossed them in all of the spices and rolled the strips in the phyllo dough. My kids seemed to like them more than...
