Reviewed Sausage, Sage and Chestnut Dressing

This was great. The chestnuts were expensive ($6/lb) and not sure they added all that much to the overall flavor. Can probably skip those if you wanted to save a few dollars.

Ground chicken meatballs are great - love that they are baked too. But skip the sauce. It's runny and lacks flavor and depth. Make Ina's marinara sauce instead - you won't be sorry."

This was delicious. I made it vegetarian so used a rich veggie stock (carrots, onions, celery, garlic) instead of chicken and skipped the sausage. This has great flavor and will definitely make again."

Absolutely delicious. The key to success is the shrimp stock. Used the heads and peels from the shrimp (along w/ onion, celery, carrot, garlic, ...) and made a rich stock. Also - added okra to the gumbo that I cooked down a little bit in a separate pan to remove some of the slime. Instead of crabs used shrimp and crayfish. Will definitely mak"

These were the best chicken enchiladas I have ever made. There are two changes I would definitely incorporate. The recipe does not make a lot of sauce. Therefore, if you like sauce, you should seriously consider doubling the recipe (it's no additional work. Also, the sauce was not as spicy as we like so we doubled the number of jalapenos. The bl"

Reviewed Shrimp and Pasta in a Tomato-Chile Cream Sauce

I was searching for recipes for dinner that used shrimp and pasta and am so glad I chose this one. It was THE BEST!!! I used half & half and omitted the butter (I was out. This was still remarkably rich (and spicy. It doesn't really need the pepperjack at the end; next time I make this I'll omit.
Thanks Emeril for an outstanding & simple...

Reviewed Black-Eyed Peas with Bacon and Pork

Jan 28, 2013 in Food Network Community Toolbox on FoodNetwork.com

This recipe is delicious. I'm not a fan of pork, and wanted to avoid the calories of bacon so I didn't include them. Believe it or not - the bacon flavor was not missed. This dish is so flavorful as is. So - if you're looking for a vegetarian version of black eyed peas - look no further. This dish is that good, and even better the next day! "

This was very good, but the onions were not worth the work. They require almost constant watching, and there's no way I can devote that much time and effort to something that can easily be substituted. I'm glad a did a trial run before Xmas. ""

This chowder was OUTSTANDING. I incorporated suggestions from others, including omitting the 2nd stick of butter and using whole milk instead of half & half. Neither were missed. I will definitely make this again.
