Reviewed Vegetarian Paella

"I used an italian flavored soy sausage. I also did not use the artichokes and used a fresh tomato. Because of this, I didn't have the liquid it expects to simmer in, so I just added chicken brother a little earlier. Also no parsley or bay leaf (simply because I didn't have them) but the flavor from the sausage more than made up for it."

"I love this recipe! The second time I made it, I thought it needed some more protein so I added a can of [rinsed] white beans...it added a nice texture. I also didn't puree it, since I don't have a blender. Top it with a little sour cream and it's delicious!"
