I cooked the individual "wellies" for our new year's celebration. This recipe is embarassingly EASY! But it won my husband's, "this is the best thing you've ever made" award! I couldn't find water cress, so simply substituted arugula, which worked fine. So as not to have too rare of a steak, I did sear it a little longer than the recipe called...
