Love this recipe! This is the second time i am making this cake - as far as being dry DO NOT OVERMIX! that will certainly make your cake to dry. I had no problems at all with the cake being dry - especially when you spritz with coconut water. Best coconut cake ever!

I love love this recipe! This is my third time using it and I usually do a 20 pound turkey - which takes about 3 to 3 1/2 hours.

also to "biturner" brine is SUPPOSED to be overly salty that is the purpose. Most brine recipes call for 2 cups of salt to 2 gallons of water - if it isnt salty enough than there is no point in brining,...
