Reviewed Meatless Shepherd's Pie with Horseradish-Cheddar Potatoes
"This was AWESOME! I did bump up the veggies and added a pound of lean ground beef so that I could fill a 9x13 pan. I switched out the veggie stock for beef and used sliced baby bella mushrooms instead of the big guys.
Two notes I would like to make. This is NOT a 30 minute meal. I am a quick chopper and this still took me a full hour. The other thing is 3 cups of stock was way too much. I needed to make up some more roux to thicken it all up.
Even with the extra time it took it is totally worth making and I will have left overs for the whole week. I will be adding this to my regular rotation. Thanks Rach!
