My Activity

Reviewed Shrimp Gumbo

"I usually collaborate recipes from the food network chefs, but this gumbo recipe was easy to follow and I was able to add my own twist.
I happen to save some shrimp stock that I had from making shrimp cocktail, good thing because the shrimp stock gives it a lot of flavor.
I prepped all the ingredients first so that the process was easy to follow. I also added chopped parsley along with the thyme, and I added chicken to increase meats.
I actually breaded and fried the chicken breasts in oil, then cut it up unto cubes.
Then I added the flour and made a roux on the pan instead of the oven. The dark color of the oil from the chicken made it quicker for browning and it also flavors the flour and oil for the stew. Everything else I did according to the recipe. There was one more step, I wanted to make a lot of stew so I added water and some chicken bouillon and white wine.
To top it off, Tobasco sauce was the key!!"

Reviewed Marinated Lamb Shoulder Chops with Tzatziki, Arugula, and Feta

"This dish is very light. If you like gyros, you'll like this meal. I bought a pack of 3 lamb Shoulder chops and marinated it in the morning for dinner. I didn't use oregano, but the dish mainly needs the mint and garlic. I semi-homemade every thing else.. Bought cucumber dill tatziki and used an entire packet of arugula. The dressing is a bit lemony, and go easy on the salt. I added more feta because the bag of salad was more than 2 cups. I also added red wine vinegar and sugar to ease up on the oil and lemon.
I didn't use e grill, just used my sauté pan.
I chopped up the lamb to make it easier to eat with the salad and topped it with tatziki. My husband loved it because he loves gyros.

Overall slightly easy to make. And lamb should be cooked about medium well."

Reviewed Chicken Breast with Crab and Artichoke Souffle

"Does taste a little fishy but go easy on the crab boil aka old bay seasoning. Also the artichokes take a little bit of the fish flavor away. I added chopped parsley and sprinkled lemon on the crab topping. It was really easy to make and very light. I paired it with brown rice and total cost me $19 to make 6 servings. Very gourmet looking for a great price.
