Really, really good. I usually make marsala or baked, and this was sooo good! Because I cook for a person who does not use alcohol (i.e., AA), I simply upped the chicken broth to 1 cup and added a little soy sauce (1 Tbsp) and two extra mushrooms sliced for flavor. Just delicious. And easy, thanks!!

Simple, brothy and delicious. A great starter to a more complex meal, or on it's own, a great way to really experience the butternut squash flavor. I used coconut oil instead of unsalted butter.
