I love eggplant and am always looking for something new. I roasted the eggplant slices at 400, brushed with olive oil, to reduce the fat that eggplant soaks up from frying. The ricotta is a nice change. This is delicious!

I have experimented with different recipes and approaches to mac and cheese, with mixed results. I loved the gruyere and hint of blue cheese, but did not include the bacon. Moist and delicious! The recipe does make four generous servings, not two. Will be one of my go to recipes.

Light, easy and delicious. I thought it would be bland, but it was well balanced. I added some fresh asparagus which added some crunch and color. Will definitely make again.
