"Very good dish and very simple to make! I used Israeli couscous for this dish and it took a little longer to soften than the recipe indicated. I loved the flavor of the roasted garlic and corn! "This recipe is wonderful for a week-night meal! It was very simple to make and had great flavors. I substituted pancetta for veggie bacon since I don't eat pork products and it turned out great. However, if I wanted to choose a dish for a special occasion, this would not be my first choice. Still a wonderful dish, though!"
